Ginger Garlic Drumsticks

Ingredients
- 10 chicken drumsticks Skin On
- 1/4 cup chicken broth
- 1/4 cup water
- 2 tbsp honey
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 3 garlic cloves Minced
- 1 1/2 tsp ginger Minced
- 1/2 yellow onion Chopped
Instructions
- Mix together (in bowl) sauce ingredients: water, soy, honey, brown sugar, rice vinegar, garlic, ginger and onion
- Pour 1/2 of the sauce into instant pot
- Add chicken drumsticks, then pour the rest of the sauce on top of the drumsticks
- Cook MANUAL – 10 minutes
- Let drumsticks cook down for 3-5 minutes before releasing steam
- Release steam while hitting the SAUTE button so the sauce starts reducing
- Remove drumsticks and place them on cookie sheet lined with parchment paper
- Broil chicken for 2 minutes on each side. Meanwhile, leave sauce in the instant pot so it continues reducing
- Remove from oven. Place on plate over quinoa/rice. Drizzle sauce over and serve.
