Ingredients

  • 10 chicken drumsticks Skin On
  • 1/4 cup chicken broth
  • 1/4 cup water
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 3 garlic cloves Minced
  • 1 1/2 tsp ginger Minced
  • 1/2 yellow onion Chopped

Instructions

  • Mix together (in bowl) sauce ingredients:  water, soy, honey, brown sugar, rice vinegar, garlic, ginger and onion
  • Pour 1/2 of the sauce into instant pot
  • Add chicken drumsticks, then pour the rest of the sauce on top of the drumsticks
  • Cook MANUAL – 10 minutes
  • Let drumsticks cook down for 3-5 minutes before releasing steam
  • Release steam while hitting the SAUTE button so the sauce starts reducing
  • Remove drumsticks and place them on cookie sheet lined with parchment paper
  • Broil chicken for 2 minutes on each side.  Meanwhile, leave sauce in the instant pot so it continues reducing
  • Remove from oven.  Place on plate over quinoa/rice.  Drizzle sauce over and serve.
